On my recent trip to Egypt, I immersed myself in a culture where food is more than sustenance—it’s a ritual of health, community, and balance. One dish that stood out as both flavorful and deeply aligned with nutrition was the vibrant Fattoush salad—a staple across the Middle East and a perfect dish to cool and nourish the body during the warmer months.

Fattoush: A Summer Symphony of Plants and Spices

Traditionally, Fattoush is a zesty, fresh salad with seasonal vegetables, herbs, and toasted pita. To align with our philosophy, we’re giving it a few healing upgrades: gluten free options, anti-inflammatory oils, and a mineral-rich dressing that supports digestion and immunity.

Recipe: Fresh Egyptian-Inspired Fattoush Salad

Cook Time: 5 minutes (for pita toasting, optional)

Ingredients

Salad:

  • 2 cups organic romaine lettuce, chopped
  • 1 cup organic cucumber, diced
  • 1 cup organic cherry tomatoes, halved
  • ½ cup organic radishes, thinly sliced
  • ½ cup organic red bell pepper, diced
  • ¼ cup fresh organic parsley, chopped
  • ¼ cup fresh organic mint, chopped
  • 1–2 gluten free slices of pita bread, toasted and broken into pieces (optional)

Dressing:

  • 3 tablespoons extra virgin olive oil (cold-pressed)
  • Juice from 1 organic lemon
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sumac (a tangy, lemony flavor, antioxidant-rich Middle Eastern spice. This bright red spice can be found in Middle Eastern markets, spice stores, and online.)
  • 1 small garlic clove, finely grated
  • ½ teaspoon Himalayan pink salt
  • Fresh cracked black pepper to taste

Instructions

  1. In a large bowl, combine all salad vegetables and herbs.
  2. In a separate bowl, whisk together all dressing ingredients until emulsified.
  3. Drizzle the dressing over the salad and toss well to coat.
  4. Just before serving, sprinkle with toasted pita pieces (optional for added crunch).
  5. Garnish with extra mint or a sprinkle of sumac for color and flavor.
